The Therfield parish register records the baptism of Alfred, son of Edward Hagger and Emma his wife. Edward and Emma had the same family name (i.e. Edward Hagger married Emma Hagger). The 1861 Census, per below, shows Alfred, son of Edward H Preston and Emma H. At some point before 1861 the family name 'Preston' was adopted. As to the origin of the family name 'Preston' in this instance, and the reason why it replaced 'Hagger', has not yet been determined.

At the time of the 1871 England Census Alfred H Preston, age 25, born in Therfield Hertfordshire, carpenter, and wife Frances M Preston, age 35, born in Lewis Sussex, were living at 11 Rye Street, Bishops Stortford, Hertfordshire. With them was daughter Gertrude E (1) of Bishops Stortford.
At the time of the 1881 England Census Alfred H Preston, age 35, born in Therfield Herts, carpenter, and wife Francis M Preston, age 45, born in Lewes Sussex, were living in Rye Street, Bishop's Stortford Hertfordshire. With them was daughter Gertrude E (11) of Bps Stortford Herts.
At the time of the 1891 England Census Alfred H Preston, age 46, born in Thurfield, carpenter & joiner, and wife Frances M Preston, age 56, born in Lewes Sussex, were living in Rye Street, Bishop's Stortford Herts. With them was Frances's granddaughter Catharine G Wallace (6) of Buntingford Herts.
