A search of the Old Parish Registers of Scotland failed to turn up the birth and/or baptism of William.

The Joyce family lived at 12 Bury Street, St. James in 1826 and, according to Robson's Directories, were still there in 1829. No record of William Joyce (baker) from 1831.
In 1828 there was a John Joyce (perhaps a brother of William Joyce above), a baker at 42 Rupert Street, Haymarket, later taken over by William Joyce (above) during the years 1835-1836. John Joyce's son, also William, was then operating as a baker at 18 George Row, Bermondsey from 1843 to 1855.
At the time of the 1841 England Census William Joyce, aged about 53, baker, and wife Mary, aged about 40, were living in Clipstone St., Trinity District, St. Marylebone, Middlesex. Present were children Thomas (16), Agnes (18), John (15), Mary (12), [sister-in-law] Eleanor Pilmer (45), and [relations) Alice Palmer (40) and Edward Palmer (3).
At the time of the 1851 England Census William Joyce, aged 63, born in Scotland, baker, and wife Mary, aged 55, born in Berwick-on-Tweed Northumberland, were living at 3? Colville Terrace, Chelsea, Middlesex. Present were wife Mary (55) of daughters Agnes (28) of St. George in Middlesex, and Mary (22) of St. James in Middlesex.
