Most French researchers of the Sainsaulieu family go back no further than this Jean. However, others with access to old archival material propose that this Jean belonged to the same Sainsaulieu family who were landed gentry during the medieval period, who in turn can be traced back to minor nobility and beyond. Even though I have not been able to directly confirm that Jean was the son of Antoine, I have nonetheless indicated this here as a possibility.
